Delicious Moroccan Chicken Recipe

Ingredients

  • 1 lb boneless chicken breast (seasoned)
  • 1 lb boneless chicken thighs (seasoned)
  • 1 tbsp paprika
  • 1 tbsp dried ground ginger
  • 1 tbsp roasted ground geera
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp cinnamon
  • 1 tsp ground corriander
  • 2 tbsp vegetable oil
  • 1 large onion
  • 2 pimento peppers
  • 4 cloves of garlic
  • 2 tbsp tomato paste in ½ cup water
  • chopped fresh shadon beni for garnish
  • 1 lime (juiced)

Directions

  1. Season chicken to taste as you normally would.
  2. Grill chicken in a hot pan and then chop into one inch cubes.  Chicken does not need to cook through: it just needs colour on the outside. Save any juices with the chicken.
  3. Chop the onions, pimentos and garlic and sautee in the 2 tbsp of oil until soft.
  4. Add all the ground spices, salt and pepper and stir quickly so they don’t burn. Add ½ cup of water with the tomato paste.
  5. Add the diced chicken and stir to coat.
  6. Simmer for 10 minutes until the chicken is cooked through, stirring every minute.  Add a small amount of water if necessary.  Do not let the chicken dry out.
  7. Add chopped fresh shadon beni and a sprinkle of lime juice before you serve.
