Festive Christmas Rice
Serves 12
3 Cups Parboiled Rice
1 tsp. Red Food Colouring
1 tsp. Green Food Colouring
1 tsp. Yellow Food Colouring
6 Cups Water
1 Cup Kernel Corn
½ Cup Raisins
½ Cup Frozen Garden Green Peas
¼ Cup Chopped Flat Leaf Celery
¼ Cup Chopped Pimento Peppers
3 tbsp. Vegetable Oil.
1 tbsp. Grated Ginger
1 tbsp. Grated Garlic
1 tsp. Salt
1 tsp. Black Pepper
Method
- Place 2 cups of water to boil, add to boiling water, 1 tsp. salt, 1 tsp. red food colouring and 1 cup rice.
- Cover pot and steam rice on low heat for 20 minutes until there is no more liquid and rice is soft but firm.
- Repeat this procedure with the other 2 cups of rice adding the remaining food colouring green or yellow with each cup of rice.
- Allow coloured rice to cool for 5 to 10 minutes after cooling.
- Heat oil in a large skillet for 1 minute.
- Place ginger, garlic, pimento. Sauté for 1 minute.
- Add to this mixture celery, raisins, corn, green peas and sauté for 3 minutes.
- Combine different coloured rice to mixture with celery salt, salt and black pepper. Sauté, turning constantly for 4 minutes to incorporate all ingredients and develop maximum flavours.
Variation
- ½ cup chopped/slivered almonds can also be added.
- If too colourful omit red and green food colouring. Only use yellow with the same ingredients and method.
