Barfi

Makes 32

Ingredients:

1 lb. powdered full cream milk

2 cups granulated sugar

1 cup water

2 tsp. fresh minced ginger

2 tsp. ghee (clarified butter)

½ tsp. cardamom/ elaichi seeds grinded

½ cup condensed milk

 

Method:

  • Mix sugar and water and put on stove to simmer for approximately 15 to 20 minutes until it thickens (just before sugar spins a thread).
  • Add milk, ghee, minced ginger, cardamom and condensed milk to a stainless steel bowl.
  • Stir in syrup mixture and quickly combine well.
  • Pour into a greased tray.
  • Decorate with almonds or sprinkles. Cut when cool into squares.
